Recipe Ingredients for Lentils ala Nancy

16 oz Lentils
7 oz beer
8 oz Tomato Sauce
30 oz Tomatoes Diced Cut and Peeled No Salt Added
190 grams Peeled Baby Cut Carrots
11 oz Low Sodium V8 100% Vegetable Juice
261 grams, chopped Peppers, Sweet, Red
78 grams, sliced Onions
60 grams Manzanilla Pimiento Stuffed Olives
3 tbsp Olive Oil

Recipe Directions for Lentils ala Nancy

  1. Saute onion, pepper, and carrots in olive oil; cook until onions are translucent

  2. Add lentils

  3. Add olives

  4. Add beer

  5. Add diced tomatoes (no salt added) and tomato sauce (no salt added)

  6. Spice to taste (italian seasoning, pepper, parsley)

  7. Add water as needed to cover mixture

  8. Bring to boil

  9. Simmer 20-25 minutes (until lentils are tender)
