Lentil and rice casserole with vegetables, turmeric and ginger

Recipe Ingredients for Lentil&Rice with Ginger

4 cups rice
454 g lentils
4 medium carrots
1 large bell pepper
1 medium onion
2 tbs kosher salt
1 tbs turmeric
1/4 tsp marjoram
1 tsp oregano
2 tbs olive oil
1/2 cup celery
5 c water
2 oz ginger
2 cloves garlic

Recipe Directions for Lentil&Rice with Ginger

  1. cook rice (I used a rice cooker - 2 cups rice, 2.67 cups water)

  2. Sort & Rinse lentils

  3. Peel carrots, garlic, onion and ginger

  4. Finely dice all vegetables, garlic and ginger

  5. Mix vegetables, spices, seasonings and other ingredients (except rice) in a large pot add 5 cup water

  6. Bring to a boil, reduce to simmer with titled lid for 20 mins or so, stirring occasionally, season to taste

  7. Stir in cooked rice, serve as a meal (2 cups) or a (side .5-1 cup) - Makes 6 2-cup servings.
