We make these veggie burgers to use up our left over lentils. They have a very soft consistency that firms up if they are formed into patties and chilled for at least an hour.

Recipe Ingredients for Lentil Walnut Veggie Burgers

4 tablespoons chunky salsa
4 cups cooked lentils, drained very well
1 cup cooked celery
1/2 cup corn meal
1 egg
1/2 cup walnuts
1/2 teaspoon cumin
1/4 teaspoon turmeric
2 tablespoons extra virgin olive oil

Recipe Directions for Lentil Walnut Veggie Burgers

  1. Pour 1 cup of the lentils into a food processor with the walnuts, olive oil, salsa, and spices. Chop using the pulse mode of the processor, and add additional lentils 1 cup at a time, and pulse again. When the mixture is fairly smooth, add the celery and blend again. Pour this mixture into a bowl, add the corn meal and egg, and beat well. Using a half cup measure or so, scoop about 8 measures on to a non-stick griddle. Place the griddle into the fridge for at least an hour to let the corn meal absorb the moisture. This can be done the night before, if it is easier.

  2. Place the griddle over two burners, and cook on low for ten minutes. Turn the burgers carefully, and let cook for ten minutes or until desired color. Burgers will be soft, but taste great. We usually use the rest of the bottle of salsa mixed with a bag of frozen corn to serve over the burger.
