Nice one pan meal with no meat and lots of good vitamins, fiber, protein and iron.

Recipe Ingredients for Lentil Veggie Stew

16 oz lentils
1 cup carrots
1 cup celery
0.33 cup onion
4 tablespoon garlic
1 teaspoon olive oil
1 1/2 cup spinach
1 tablespoon bouillon

Recipe Directions for Lentil Veggie Stew

  1. Heat a large wok or pan over medium heat and add olive oil.

  2. Slice and add veggies, except spinach, to the hot pan.

  3. While cooking the veggies, sort and rinse the lentils.

  4. When veggies begin to soften, add the sliced spinach until it wilts down.

  5. Add the clean lentils and just enough water to cover them.

  6. Turn heat up to med-high until it simmers then lower to just a simmer and cover.

  7. When lentils are tender, add the bouillon to taste and serve!
