Recipe Ingredients for Lentil Veggie Soup

1 1/3 cup green lentils
1/2 cup onion
1/2 cup carrot
1/2 cup celery
1/2 cup yam
4 cups water
2 cups spinach
1/2 teaspoon white pepper
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 tablespoon lemon juice

Recipe Directions for Lentil Veggie Soup

  1. Rinse the lentils well.

  2. Start the lentils in the cold water, throwing in a bay leaf.

  3. Chop all the veggies and add to the pot.

  4. Simmer until nearly done, then add the spinach.

  5. Add the fresh herbs and pepper.
