A hearty vegetable soup with lentils for protein and fiber. Freezes well.

Recipe Ingredients for Lentil Vegetable Soup

4 medium carrots, chopped (244 g)
1 cup celery, chopped (120 g)
2 1/5 large yellow onions, chopped (330 g)
2 cloves garlic, chopped (6 g)
2 tbsp safflower oil (27g)
1 3/4 cups raw lentils (336 g)
4 cups chicken broth (960 g)
6 cups water (1422 g)
2 medium russet potatoes , diced (426 g)
4 1/4 oz fresh kale, chopped (121 g)
1/2 tsp salt (3 g)
2 tbsp red wine vinegar (30 g)

Recipe Directions for Lentil Vegetable Soup

  1. In a large soup pot, cook carrots, celery, onion and garlic in oil for 10 minutes.

  2. Add broth, water, 4 bay leaves and lentils, bring to a boil then reduce heat and simmer covered for 30 minutes, stirring occasionally.

  3. Remove bay leaves.

  4. Add potatoes and cook until tender, 10-15 minutes.

  5. Add kale and cook 1-2 minutes.

  6. Remove from heat and add red wine vinegar and salt, stir.

  7. Makes 6 large servings.
