Recipe Ingredients for Lentil Vegetable Soup

1/2 cup dried lentils
43 1/2 ounces vegetable broth
1/2 cup long grain brown rice, uncooked
1 medium onion, chopped
1/2 cup tomato juice
5 1/2 ounces v8 juice, spicy hot
1 tbls soy sauce
1 tbls oil
1 medium potato, peeled and cubed
1 t medium tomato, cubed
1 medium carrot, sliced
1 celery stalk, sliced

Recipe Directions for Lentil Vegetable Soup

  1. In large saucepan, combine the first eight ingredients. Bring to boil, reduce heat and simmer 30 minutes

  2. Add potatoes, tomatoes, carrots and celery and simmer 30 minutes or until rice and vegetables are tender
