Lentil and Vegetable Soup Recipe

I use whatever spices and vegetables I have on hand. What really makes this soup is putting a stick of cinnamon in and let it slowly give the soup flavour. Serving size is half a cup.

Recipe Ingredients for Lentil and Vegetable Soup

1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1/2 cup red lentils
200 g carrots, chopped
400 g potatoes, chopped
114 g mushrooms, sliced
100 g bell pepper, red, chopped
100 g corn, canned
4 cups water
2 cups crushed tomatoes
1/4 cup chili sauce
1 salt, pepper, chili powder, cinnamon, cardamom, etc

Recipe Directions for Lentil and Vegetable Soup

  1. Saute onion and garlic in the oil. When it's soft, add the spices, and stir to incorporate. Let them sautee in the oil for about a minute.

  2. Add chopped carrots, potatoes and 2 cups water. Bring to a boil and simmer for 30 minutes.

  3. Meanwhile, cook the lentils in a separate pot; the tomatoes will prevent them from going soft if you just chuck them in as is.

  4. Add mushrooms, bell pepper, crushed tomatoes, lentils, 2 cups of water and spices, and let simmer for about 30-45 minutes.

  5. Eat eat eat. :D
