Recipe Ingredients for Lentil and Vegetable Green Curry

1 sweetpotato, 5" long Sweetpotato
1 cup Cauliflower
2 cup, cubes Eggplant
302 grams Lentils
2 tbsp Green Curry Paste
1 cup Organic Vegetable Cooking Stock
0.5 cup, chopped Onions

Recipe Directions for Lentil and Vegetable Green Curry

  1. 1. Brown Onions

  2. 2. Pre-cook Sweet Potatoes in Microwave for 2 min.

  3. 3. Add Eggplant, Cauliflower, Sweet Potato and Curry Paste to Onions

  4. 4. Simmer until all vegetables cooked through, add stock.

  5. 5. Cook over low heat until ready.

  6. Serve with Rice, Pappadam and Yogurt
