Vegetarian Curry - spicy and filling!

Recipe Ingredients for Lentil and Vegetable Curry

245 grams Lentils
1 medium (2-1/2" dia) Onions
2 tbsp Olive Oil
0.5 cup Cauliflower
0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
274 grams Tomatoes Whole Peeled
1 carrot (7-1/2")(72 g) Carrots

Recipe Directions for Lentil and Vegetable Curry

Fry onion, with 1tbsp each garlic and ginger. Add one 1 tsp of each of the following: curry powder, turmeric, mustard seeds, cardamon pods, chilli, and a cinnamon stick. Mix to make a paste. Drain and rinse lentils and add to pan, then add tomatoes. Allow to simmer for 15 - 20 minutes. Add vegetables and 1/2 cup of water if required. Simmer for a further 15 min until veg is cooked.
