Recipe Ingredients for Lentil. vegetable and bean casserole/stew

1 small onion, finely chopped
1 garlic clove, finely chopped
1 tablespoon olive oil
12 oz beans, pinto, mature seeds-cooked without salt
6 oz lentils-green or brown, dried
4 oz carrots, finely chopped
4 oz parsnip, finely chopped
2 oz celery, finely chopped
2 oz frozen peas
1 tablespoon worchestershire sauce
1 tablespoon dried mixed herbs
1 gram bay leaf
1 pint of boiling water
5 grams boullion - swiss vegetable, dry, powder , add to water to make stock
1 salt and pepper, season to taste

Recipe Directions for Lentil. vegetable and bean casserole/stew

  1. In a large saucepan heat the oil and fry off the onion until soft, add the garlic and other vegetables and place lid on pan and on a low heat sweat the vegetables off for 10 minutes.

  2. Make the stock with the water and stock powder and add to the pan and stir, adding the lentils and cooked beans.

  3. Now add the worchestershire sauce, herbs, bay leaf and seasoning to taste and simmer gently with lid on for 40-45 minutes, or until vegetables are nice and soft.

  4. Serve with your choice of side.
