A moist and yummy vegetable loaf made with lentils. This serves 6 easily, but smaller portions are good, too. This is very customizable! Season it with various herbs or switch the lentils for split peas.

Recipe Ingredients for Lentil Veg Loaf

2 cups cooked lentils
1 cup diced carrots
2 stalks celery, diced
1/2 onion, diced
1 clove garlic, minced
1/2 cup bread crumbs
1 tsp salt
2 tbl olive oil
1/4 tsp thyme

Recipe Directions for Lentil Veg Loaf

  1. Heat the oil in a skillet.

  2. Saute the vegetables until soft, then add the garlic and cook for another minute.

  3. Combine the vegetables, lentils, and seasonings. You can either puree everything or leave it as it is.

  4. Add the breadcrumbs to the vegetable mixture.

  5. Pack into a greased or lined loaf pan.

  6. Bake at 350 degrees F for 45 minutes.

  7. This is awesome plain or with ketchup!
