Lentil turkey casserole with brown rice and vegetables.

Recipe Ingredients for Lentil Turkey Casserole

0.67 cups raw lentils (1.5 cups dried)
1 1/4 cups brown rice (1.5 cups normal brown rice)
2 cups celery
1 cup carrots
1 cup onions
1 pound ground turkey
45 ounces chicken broth
2 teaspoons olive oil
8 ounces cheddar cheese
1/3 cup breadcrumbs

Recipe Directions for Lentil Turkey Casserole

Bring lentils, brown rice, and broth to a boil. Simmer covered for 50 min until tender. Meanwhile chop vegetables, and in nonstick pan with the olive oil, saute onion, celery, carrots and turkey with salt to taste. Set aside. Preheat oven to 425 F. In a 13 x 9 glass baking dish, combine lentil and rice mix with turkey mix. Add 8 oz (1 pkg) shredded cheddar. Press even. Sprinkle with breadcrumbs. Bake 20-25 min.
