lentil tomatoe soup or sauce - add less water to make spaghetti sauce

Recipe Ingredients for lentil tomatoe soup or sauce

1 small eggplant
1 large mushroom cap
1 leek
1 carrot
1 potato
32 oz diced tomatos
8 oz vegetable broth
2 tsp olive oil
1/2 c dried lentils
1/2 bouillon cube

Recipe Directions for lentil tomatoe soup or sauce

  1. chop all veggies

  2. saute with olive oil

  3. add can of diced tomatos

  4. add vegetable broth

  5. add lentils

  6. if going to make soup add 1/2 boullon cube and a using the can from the diced tomatos add 1.5 cans of water.

  7. add herbs of your choising

  8. let simmer 1 hour.
