A healthy and easy to make sauce that tastes rich and delicious. The secret is to just let the tomatoes cook down, so you get that concentrated, full, rich tomatoe taste.

Recipe Ingredients for Lentil Tomatoe Sauce

1/2 large onion
6 cloves garlic
1 tablespoon tomatoe paste
3 1/2 cups canned tomatoes
3 tablespoons lentils
1 teaspoon balsamic vinegar
1 tablespoon extra virgin olive oil

Recipe Directions for Lentil Tomatoe Sauce

  1. * sautee onions and garlic in olive oil for a couple minutes

  2. * add tomatoe paste, stir it in

  3. * add tomatoes

  4. * add vinegar

  5. * let tomatoes cook down for 10 minutes or so

  6. * season to taste (e.g. bay leaves, oregano, basil)

  7. * puree the sauce in the pot with hand blender, or transfer to other blender

  8. * add in pre-cooked lentils

  9. keep cooking it down, and add some water if you want more volume.

  10. The sauce can be done in 20 minutes; cook longer for thicker, richer taste
