Recipe Ingredients for Lentil and Tomato Soup

2 medium onions
2 clove garlic
4 green peppers
450 g tomatoes
120 g red lentils
1 tbsp bay leaf
2 tbsp sunflower oil
700 ml water

Recipe Directions for Lentil and Tomato Soup

  1. Heat the oil and cook the onions, garlic and peppers for 5 minutes.

  2. Add the lentils, tomatoes and bayleaf and cook for another 2-3 minutes.

  3. Add the stock and bring to the boil. Simmer for 10-15 minutes until the vegetables and lentils are tender.
