A thick lentil and tofu soup to warm up the winter.

Recipe Ingredients for Lentil & Tofu Soup

4 c water
290 g carrots
150 g celery
120 g peppers, sweet
1 tbsp butter
225 g red lentils
200 g tofu
1 tsp dill weed
1 tsp thyme
1/2 tsp black pepper

Recipe Directions for Lentil & Tofu Soup

Melt butter in a large soup pot. Add the chopped carrots, celery, and onions. Saute for 5 minutes. Add the rest of the ingredients and simmer for 20 - 25 minutes.
