Great dinner - very yummy and very healthy

Recipe Ingredients for Lentil Tacos

1 tbsp Olive oil
1 cup onion, chopped
1/2 cup celery, chopped
3 garlic cloves, minced
1 cup lentils
1 tablespoon chili powder
2 teaspoons cumin
2 cups vegetable broth
1 1/2 cup salsa
12 corn tortillas

Recipe Directions for Lentil Tacos

  1. In large sauce pot, heat oil over medium heat. Add onion, celery, garlic and saute for 5 minutes. Stir in lentils, and spices, cook for about 1 minute. Add broth, cover and cook 15 minutes, until lentils are tender.

  2. Remove lid and add salsa, cooking for another 10 minutes.

  3. Divde into tortillas, and top with your favorite toppings.
