Recipe Ingredients for Lentil Taco Salad

2 cups sweet red peppers
1 cup lentils, (brown) rinsed and drained
1 cup onion, chopped
1/2 cup brown rice, uncooked
2 teaspoons chili powder
1/4 teaspoon salt
3 cloves garlic, minced
28 oz vegetable broth
2 cups shredded lettuce
2 cups chopped tomatoes

Recipe Directions for Lentil Taco Salad

  1. Put peppers, lentils, onion, rice, chili powder, salt and garlic into a slow cooker. Pour over broth.

  2. Cover and cook on low heat for 10-12 hours or on high heat for 5-6 hours.

  3. Serve lentil mixture over tortilla chips (account for calories separately). Top with shredded lettuce, tomatoes.
