This soup has a blend of green and red lentils. The red lentils dissolve quickly, giving a thickened broth, while the green lentils hold their shape and give plenty of texture.

Recipe Ingredients for Lentil & Swiss chard Soup

1 cup green lentils
1/2 cup red lentils
1 scallion
1/2 medium onion
2 carrots
3 stalks celery
1 tsp thyme
1 tsp ground cumin
4 cups nonfat chicken broth, reduced sodium
2 cups water
1/2 tsp sea salt
2 tsp pepper
1/2 tsp red pepper flakes
1 cup Swiss Chard, chopped
2 tbsp extra virgin olive oil

Recipe Directions for Lentil & Swiss chard Soup

  1. Chop onions, celery, carrots, scallions.

  2. Saute them in the olive oil until they begin to be softened. Add lentils and swiss chard and stir to coat with the juices from the pan. Add broth and water.. Add seasonings. Bring to a boil; then simmer for 30 to 35 minutes.
