Recipe Ingredients for Lentil & Sweet Potato Soup

1 cup of lentils, soaked
1 onion, chopped
2 tsp olive oil
1 garlic clove, chopped
1 tbsp curry powder
1 sweet potato, chopped
1 bouillon cube, vegetable

Recipe Directions for Lentil & Sweet Potato Soup

  1. Put the lentils in a pan with 3 cups of water. Bring to the boil. Skim off any scum, turn down the heat and simmer for 20 minutes.

  2. Sauté the onion in the olive oil until soft. Add the garlic and curry powder and cook for a few more minutes. Add the potatoes and cook for 5 minutes, stirring constantly. Continue to add water to mixture as desired for soupy consistancy.

  3. Add the sauté mix to the lentils with the bouillon and cook for 10-12 minutes until the potatoes are cooked through.

  4. Mix in blender or food processor for desired consistancy.

  5. Enjoy!
