0.5 cup dry Lentils
2 medium raw Bell Pepper Green
0.5 medium raw Onion Yellow
3 cloves, raw Garlic
10 oz Mild Diced Tomatoes and Green Chilies
2 cup Light
1 tsp, leaves Basil, Dried
0.33 tablespoon Oregano
0.2 tsp Garlic Powder
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Lentil Stuffed Pepper Soup

Begin by heating the olive oil in a large Dutch oven over medium high heat, adding your onion and garlic when hot enough. Cook your onion and garlic until translucent (~5 minutes) and add your green pepper, diced tomatoes, vegetable broth, brown rice, and lentils. Give your stoup a stir until all the ingredients are combined, and then add your spices. Cover and lower the heat to simmer for at least 30-45 minutes, stirring occasionally. Ladle up and enjoy!
