Lentil Stoop #2 Recipe

Lentils, carrots, kale, garlic, and an assortment of spices this one will have a bit more heat/smoke with more cumin, chili powder, and red pepper flakes (and also dashes of sage, celery seed powder - like lots of flavor in mine this may be to herby for some though!). Just experiment with your flavors. If you add no seasonings at all thats ok too - sometimes I do it plain and when I eat it I use some ketchup! I love lentils and ketchup for some reason they go well.

Recipe Ingredients for Lentil Stoop #2

200 grams dry lentils
2 cups chopped carrots
144 grams kale
2 tablespoon olive oil
5 cups water
2 tablespoons minced garlic

Recipe Directions for Lentil Stoop #2

  1. 1. Heat oil in a large pot on the stove over medium heat

  2. 2. Add dry lentils, toss in hot oil to slightly toast and coat the lentils

  3. 3. Add water (4-6 cups I did 5 this time depends how soupy you'd like it)

  4. 5. Put a lid on and bring to a boil

  5. 6. Remove lid. Add the spices you like, according to your tastes, and garlic, if desired. Salt is optional... I sometimes use a little usually none.

  6. 7. Add the chopped carrots

  7. 8. Heap the kale on the top of it all

  8. 9. Turn heat to low/simmer and put a lid on the pot

  9. 10. Let it simmer for 30-40 minutes

  10. 11. Remove from heat, cool, and either store in fridge for meals for your week or serve it up.
