Recipe Ingredients for Lentil Stew

2 cup Green Lentils
2 tbsp Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
1 clove Garlic
1 medium Squash, Summer, Zucchini, Includes Skin
2 carrot (7-1/2") Carrots
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin
2 tbsp Parsley
6 cup (8 fl oz) Water
1 cup Chard, Swiss
1 cup, chopped Kale
1 cup, chopped Broccoli
1 cup cherry tomatoes Tomatoes, Red, Ripe
1/ tsp Sea Salt

Recipe Directions for Lentil Stew

Sautee all vegetables except the greens in olove oil. Add lentils and water and bring to boil. Do not add salt! Simmer 1.5 to 2 hours or 20-30 mins in a pressure cooker. Add greens 15 mins before serving. Add salt or a vegetable stock cube (add calories) to taste.
