Lentil stew or soup, home made, low fat

Recipe Ingredients for Lentil stew

24 oz Lentils
8 oz Low Sodium V8 100% Vegetable Juice
1 serving McCormick Bouillon Vegetable cube
1.5 tbsp Oil Olive Extra Virgin
18 tbsp chopped Onions
1.25 cup, chopped Peppers, Sweet, Green
1 cup, diced Celery
0.25 cup Parsley

Recipe Directions for Lentil stew

  1. Rinse lentils in cool water several times.

  2. Add 9 cups water and boil hard for 10 minutes, add soup cube, and boil gently and on medium-low heat for 30 minutes more.

  3. Put oil in frying pan. Add 1/2 - 3/4 tsp cumin seeds, flax seeds, dill seeds, 1/4 tsp coriander balls -- to taste, and cook in oil for 15 seconds.

  4. Add 1/2 tsp turmeric

  5. Add 1/2 - 1 tsp sambhar or curry powder

  6. Add 1/4 - 1/2 tsp cayenne powder.

  7. Heat for a few seconds.

  8. Add 2 large onions, diced.

  9. Cook until translucent.

  10. Add garlic 3-6 cloves, finely minced.

  11. Add 1 c V-8 or tomato juice, or 3-4 diced tomatoes.

  12. Cover and simmer 15-20 minutes.

  13. Add ingredients in frying pan to the cooked lentils.

  14. Simmer until liquid is almost gone for stew. Add diced celery and green pepper. Cook briefly, until still a bit crunchy.

  15. For soup, add water as desired.

  16. Add minced parsley and serve.
