Recipe Ingredients for Lentil Stew

3 tbsp extra virgin olive oil
1 large yellow onion, chopped
2 celery stalks, diced
2 garlic cloves, finely chopped
1/2 cup parsley, chopped
1 1/2 cups lentils
8 cups water
1/4 cup lemon juice

Recipe Directions for Lentil Stew

  1. Saute onion, celery for 5-7 minutes

  2. add garlic

  3. add parsley, stir

  4. add lentils and broth, bring to boil and simmer for 30 minutes

  5. before serving add juice of lemon, zest, fresh celentro

  6. spoon onto spinach

  7. season to taste
