Recipe Ingredients for Lentil Stew

1 cup lentils
32 oz chicken stock
1/2 onion, chopped
3 cloves garlic
1 lb. sausage, spicy italian
28 oz. diced tomatoes

Recipe Directions for Lentil Stew

  1. boil lentils in chicken stock, then simmer for 20 minutes, adding salt and a bay leaf.

  2. saute onions and garlic in separate pan, and add sausage to brown. Combine together with lentils, and add canned tomatoes. Bring to a boil, and simmer for 20-30 minutes.

  3. Serve with rice, if desired
