Lentils cooked with vegetables that can then be served with potatoes, rice, couscous or can be used as a filler for tacos or tortillas.

Recipe Ingredients for Lentil Stew

1 cup lentils, brown
2 cups chicken broth
2 tbs. olive oil
2 carrots, finely chopped
1 large onion, finely chopped
2 celery stalks, finely chopped
1 small leek, finely chopped
1 green pepper, finely chopped
1 cup zuchinni, finely chopped
2 cloves garlic, finely chopped
1/4 cup balsamic vinegar
1/2 salt, to taste
1/2 pepper, to taste

Recipe Directions for Lentil Stew

Wash and drain lentils. Cook in chicken broth until just done (about 20-30 min). Gently saute vegetables in olive oil. When lentils are done (most of the water will be gone) mix with vegetables and add vinegar and salt and pepper to taste and add 1/2 cup of water and let the lentils simmer on the stove for 20 minutes to combine the flavors. Serve with rice potatoes, couscous, or use as filler for a burrito.
