A hearty and super healthy lentil stew. Serve over brown rice for a delicious cold weather meal.

Recipe Ingredients for Lentil Stew

2 tbsp olive oil
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
3 cloves garlic
2 tsp italian seasoning
1 quart tomatoes
2 cups dried lentils
32 oz chicken broth
1 cup chopped spinach
2 tbsp balsamic vinegar
2 cups water
1 tsp black pepper

Recipe Directions for Lentil Stew

  1. Chop onion, celery, carrots and garlic. Saute in olive oil until translucent.

  2. Add seasoning, tomatoes, broth and lentils. Bring to a boil then simmer for at least 45 mins. Depending on thickness you may need to add up to 2 cups of water.

  3. After simmering add vinegar and spinach. Continue simmering until spinach has wilted.

  4. Serve over a bed of brown rice.
