Recipe Ingredients for Lentil Stew

2 t. vegetable oil
1 c. chopped onion
1 clove garlic, finely chopped
8 oz. dried lentils, sorted and rinsed
1/4 c. fresh parsley, chopped
3 c. water
1/2 t. ground cumin
1/2 t. salt
1/4 t. pepper
1/4 t. ground mace
2 medium baking potatoes, coarsely chopped
8 oz. button mushrooms, cut in half
28 oz. whole tomatoes, drained

Recipe Directions for Lentil Stew

  1. Heat oil in Dutch oven over medium-high. Cook onion and garlic until tender.

  2. Stir in remaining ingredients, breaking up tomatoes. Heat to boiling; reduce heat. Cover and simmer about 40 minutes until potatoes are tender.
