Great over rice. And when using sweet curry powder (I got mine from Penzey's), it's onion and garlic free.

Recipe Ingredients for Lentil Stew

1/2 cup dry lentils
2 cups water
2 stalks celery
140 grams carrots, finely diced
14 1/2 ounce diced tomatoes
160 g potato (Yukon Gold)
1 1/2 tsp curry powder
1/4 tsp salt
1/4 tsp celery salt
1/4 cup pepper
1/4 tsp cayenne pepper

Recipe Directions for Lentil Stew

  1. Put water and lentils in a pot. Bring to a boil.

  2. Add carrots and celery. Boil for ten minutes.

  3. Add potato. Boil for another twenty minutes.

  4. Add seasonings. Continue cooking until lentils and potatoes reach desired tenderness.

  5. Serving size, about half cup.
