A simple, hearty lentil stew seasoned with herbs de provence. Serve with buttered rice or rice pilaf.

Recipe Ingredients for Lentil Stew

1/2 pound dry Lentils
3 medium carrots, chopped
3 celery stalks, chopped
1 large red onion, chopped
4 cloves garlic, chopped
6 oz spinach, chopped
3/4 lb yukon gold potatoes, diced
2 tbsp tomato paste
6 cups low sodium vegetable broth
1 tablespoon Herbs De Provence
2 tablespoons extra virgin olive oil

Recipe Directions for Lentil Stew

  1. Saute the onion, garlic, celery, and carrots in the olive oil. Add the herbs and continue to saute for at least 2 minutes.

  2. Add the washed lentils and broth. Stir to break up clumps of lentils. Add the potatoes. Simmer for approximately 45 minutes, or until the lentils are tender. Add the tomato paste and stir to incorporate. Add the spinach and stir. Cook until wilted.
