Recipe Ingredients for Lentil Stew over Couscous

3 cups dried lentils, rinsed
3 cups water
14 oz diced tomatoes
14 oz vegetable broth
1 large onion, chopped
1 medium carrot, chopped
2 cloves garlic, chopped
1 tsp dried marjoram
1/4 tsp black pepper
1 tbsp olive oil
1 tbsp cider vinegar

Recipe Directions for Lentil Stew over Couscous

  1. Combine lentils, water, tomatoes, broth, onion, carrot, garlic, marjoram and black pepper in slow cooker; stir. Cover; cook on LOW 8-9 hours or until vegetables are tender.

  2. Stir in the olive oil and vinegar. Serve over couscous (not included in this recipe) or bread if you don't have any couscous.

  3. Lentil stew keeps well in the refrigerator for up to 1 week and can be frozen for up to 3 months.
