1 cup lentils
370 g carrots
700 g sweet potatoes
1 3/4 cup chicken stock
19 oz white kidney beans
1 tbsp lemon juice
1/2 tsp basil
550 g onion
4 cloves garlic
1 1/2 tbsp olive oil
1/2 cup Quinoa

Recipe Directions for Lentil Stew (Eat Clean Diet p. 159)

  1. Cook carrots, celerty, onions and garlic in olive oil until soft

  2. Add the stock and sweet potatoes and cook until the potatoes are soft.

  3. Add the beans and lemon juice and spices and let simmer for 5 minutes
