Recipe Ingredients for lentil and squash shepherds pie

20 grams Butter
200 grams Green Lentils
100 grams Red Lentils
20 grams Bouillon
275 grams Squash, Winter, Butternut
136 grams Celery
178 grams Onion Red
128 grams Bell Pepper Red
164 grams Squash, Zucchini, Baby
88 grams Mushrooms
766 grams Sweetpotato
260 grams Tomatoes
153 grams Spinach
100 grams Cilantro
2 tbsp Cinnamon, Ground
2 tsp Nutmeg, Ground

Recipe Directions for lentil and squash shepherds pie

  1. put lentils in pan cover with water and half the veg bouillon. Simmer until cooked through

  2. melt butter in pan, add onions then gradually add rest of the veggies apart from the sweet potato.

  3. boil sweet potato until sift then mash.

  4. Add lentils and rest of stock to veg mix and add some water if dry.

  5. Cook until all veggies are soft, taste and season if needed.

  6. Spoon into a dish and add mashed sweet potato to top.

  7. Bake in oven on low temp for 25 mins
