Recipe Ingredients for Lentil and spinach soup

2 tsp olive oil
1 onion, finely chopped
1 garlic clove, minced
2 cups chicken broth
1 cup lentils
2 cups water
1 cup spinach leaves, packed
1 tblsp cilantro, finely chopped
1/4 tsp ground cumin
1/4 tsp salt
1/8 tsp black pepper
2 tsp lemon juice

Recipe Directions for Lentil and spinach soup

  1. Heat oil in medium saucepan over medium heat. Saute onions and garlic until soft, about 5 minutes. Add broth and water, bring to a boil. Recuce heat and simmer until lentils are tender, about 45 minutes.

  2. Add spinach (or swiss chard) , cilantro, cumin, salt and pepper, stirring once until spinach wilts, about 5 minutes. Stir in lemon juice and serve.
