By Victoria333 A hear warming, comforting soup, for those cool days. Very satisfying and filling and high fiber, low cal.

Recipe Ingredients for Lentil Soup for the Wintry Soul by Victoria

2 tbsp olive oil
2 cups lentils, French green (or regular brown lentils) -Optional ?substitute 1/2C split red masoor daal (red lentils)
6 cups vegetable or chicken stock, low sodium if prefered (depending on how soupy you want the soup, start with 6 cups)

Vegetables:
1 yellow onion (1/2 may be red onion)
2 carrots (optional)
6 celery stalks, finely chopped
6 cloves garlic, finely chopped
4 tablespoon ginger root, finely chopped
3/4 cup tomatoes, chopped fine (optional)
2 fluid ounces lime juice
2 tablespoons parsley, chopped, or cilantro, for garnish

Spices:
2 bay leaves
1 tbs dried thyme, oregano, or Italian seasoning (optional)
1 tsp paprika , for color and warmth
1/2 tsp red pepper flakes , red chili, or a dash of cayenne pepper
1 tsp cumin powder (optional)
1/2 tsp curry powder (optional)
1/2 tsp mustard powder (optional)
1 salt to taste
1 tablespoon pepper, optional, to taste

Recipe Directions for Lentil Soup for the Wintry Soul by Victoria

  1. Chop onions, garlic, ginger, celery, and carrots into small pieces.

  2. Heat olive oil in a big soup pot.

  3. Add onions and sauté for several minutes on low heat until the onions are clear.

  4. Add ginger, garlic, and sauté until aromatic.

  5. Add carrots and celery and cook for a few more minutes.

  6. Rinse the lentils well and add them to the soup pot along with 6C stock.

  7. Add all the spices.

  8. Let the mixture barely come to a boil. Reduce heat to simmer and simmer covered for 30-45minutes until the lentils are tender. Boiling is usually a very vigorous motion for a soup so I just let the soup simmer for an extended period of time. Taste lentils to see if done.

  9. Once the lentils are tender and soup is ready; remove from heat. Add lime juice and cilantro/parsley. Adjust the seasonings, serve with parmesan/roman cheese, and chopped parsley/cilantro sprinkled on top.

  10. Steamed or grilled greens are a nice accompaniment to the soup; kale, spinach, broccoli rabe etc..
