An easy to prepare lentil soup using purple baby lentils. Spices can be adjusted to include paprika or curry according to your own whims. Lentils are much easier to prepare than beans and provoke none of the ill side effects in most people. Baby lentils also contain gut cleansing fiber.

Recipe Ingredients for Lentil soup (thick)

2 cups lentils (baby)
2 cups butternut squash
3 tbsp olive oil
1/2 cup garlic
1 tbsp oregano
1 tbsp black pepper
1 tbsp red pepper
12 oz tomato paste
6 cups water
1 eggplant

Recipe Directions for Lentil soup (thick)

  1. Sautee vegetables with olive oil and garlic until softened and golden.

  2. Add lentils to heat them.

  3. Add preferably filtered hot or boiling water with tomato paste and some spices.

  4. Let boil for about 30 minutes, adding additional spices a few minutes before they are done.

  5. Let soup/side dish cool naturally to enhance flavors.
