Extremely delicious. Season to taste. I used cumin, garlic, cayenne pepper and a little salt to sweat the veggies.

Recipe Ingredients for Lentil Soup

32 oz Tomatoes, Red, Ripe
30 medium Carrots, Baby
1 1/2 cup, diced Celery
2 medium (2-1/2" dia) Onions
3 cup Lentils, Mature Seeds
2 tbsp Coconut Oil, Refined, Organic
1 cube Vegetable Bouillon

Recipe Directions for Lentil Soup

  1. Heat coconut oil in pan over medium heat until melted. Heat is too high if smoke occurs.

  2. Add sliced onions. Salt.

  3. Saute until beginning to soften.

  4. Add diced carrots and celery. Continue to saute. If starts to become too dry, add a splash of water and stir rapidly to remove cooked on bits from bottom of pan. Do not remove these.

  5. Add bouillon cube and a 1/2 c water. Stir until dissolved.

  6. Add tomatoes. Bring to a boil.

  7. Add dried lentils (one cup dry makes three cups cooked)

  8. Add water until reaches desired consistency. Remember that lentils will absorb water as they cook so it is better to have more.

  9. Return soup to low boil. Reduce heat and simmer until lentils are cooked through (40-60min).
