A hearty lentil soup, full of fiber and low in fat.

Recipe Ingredients for Lentil Soup

1 tbsp Olive Oil
1 cup, chopped Onions
0.5 cup, chopped Carrots
1 cup, diced Celery
2 tsp Sea Salt
14 serving Dry Lentils (Market Pantry)
2 cup Diced Tomatoes, No Salt Added
4 cup Natural Goodness Chicken Broth
4 cup (8 fl oz) Water
0.5 tsp Coriander Leaf, Dried

Recipe Directions for Lentil Soup

  1. Place olive oil in a 6-quart Dutch oven and set over medium heat.

  2. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent. (6-7 minutes)

  3. Add the lentils, tomatoes, broth, water and spices and stir to combine.

  4. Increase the heat to high and bring just to a boil. Reduce heat to low, cover and cook at a low simmer until the lentils are tender. (35-40 minutes)

  5. Using a stick blender, puree to your preferred consistency. Serve immediately.
