Fresh Salsa, Chicken Broth and lentils (Pinto beans are also good)!

Recipe Ingredients for Lentil Soup

2 cups lentils
4 cups Organic Low Sodium Chicken Broth
2 cups water
2 roma tomatoes
1/2 cup chopped bell pepper
1/2 cup chopped onion
1/2 cup chopped cilantro
2 fruit+2"+dia limes
1 tsp vinegar
2 cloves garlic

Recipe Directions for Lentil Soup

  1. Make salsa (Look up recipe if you don't know how).

  2. Tricks: Remove peel and pith from lime then puree it, to use the WHOLE lime, not just the juice.

  3. Prepare lentils in chicken broth and water. When lentils are done, then add salsa. Slightly heat to bring the temperature back up, but keep the salsa as "raw" as possible.

  4. (Use the chili pepper of your choice to add spice)

  5. For Non-US cooks: Bell Pepper = Capsicum, Cilantro = Corriander leaves, Chicken Broth = Stock. :)
