Lentil Soup spiced with mint and cumin.

Recipe Ingredients for Lentil Soup

1/2 cup lentils
2 tbs tomato paste
4 cups water
1 tsp salt
1 tsp cumin
1 tbs mint
1 tbs pepper
1 onion, medium
1 tbs butter
1 tomato, medium
1 pepper

Recipe Directions for Lentil Soup

  1. Sort and wash the dried lentils. Drain them from the water.

  2. Chop the onion and sautee with the butter and tomato paste in a large pot.

  3. Add the chopped tomato and pepper (if desired, but no neccessary to add.)

  4. Sautee until slightly soft.

  5. Add the water, lentils, and spices.

  6. Bring to a boil.

  7. Lower the heat and let simmer for one hour.

  8. Soup can be blended for a smoother consistency.

  9. Add crushed, dried mint to serve.
