Recipe Ingredients for Lentil Soup

2 cups dried lentils
2 large carrots
3 celery stalks
2 red potatoes
1 cup parsley
8 cups water
1 1/2 yellow onions
3 cloves garlic
1 tsp canola oil
1 tsp salted butter

Recipe Directions for Lentil Soup

  1. dice vegetables and cook 5-10 minutes in oil/butter

  2. add lentils, water, and thyme, rosemary, bay leaf

  3. bring to boil

  4. reduce heat, simmer until lentils are tender

  5. add chopped parsley
