Easy lentil soup, tasty and full of fiber and nutrients

Recipe Ingredients for Lentil soup

1 tbs canola oil
1/3 cup onion
1/3 cup celery
1/3 cup carrots
2 cloves garlic
14 oz vegetable broth
3 cups water
12 oz low sodium v-8 juice
1/4 cup lentils
1/4 cup quinoa
1 1/2 cups kidney beans

Recipe Directions for Lentil soup

  1. saute veggies in oil

  2. add veggie broth and water

  3. bring to boil

  4. add quinoa and lentils

  5. reduce heat and simmer until tender

  6. add drained and rinsed beans and v-8 juice.

  7. I seasoned mine with parsley, sage, rosemary and thyme {Simon and Garfunkel fans feel free to sing along}.

  8. Draining and rinsing the beans reduces the sodium, as does using a low sodium veggie broth.
