Tomato based vegetable soup with lentils, carrots and celery.

Recipe Ingredients for Lentil Soup

1 onion
1 tablespoon Olive Oil
227 g lentils
411 g tomato sauce
42 oz water
3 carrots
3 stalks celery
3 cloves garlic
1/2 tsp salt
1/2 tsp pepper
2 tablespoons bay leaves

Recipe Directions for Lentil Soup

  1. Chop onion - saute in Olive Oil

  2. Empty 1/2 bag of lentils on a plate ( little at a time) sort lentils - sometimes you will find rocks, dirt balls, etc. Place in a pot of water - turn on high and bring to a boil. Boil for approximately 2 minutes ( there will be foam on the top - lentils will still be firm.) Drain an add to onions.

  3. Add full can of tomato sauce. Use the can the tomato sauce came in and measure out 3 (full) cans of water. Add to pot. Add diced carrots and celery. Peel garlic, slice in half (long ways) and half again. You should have 4 "slivers" - add to pot. Add 2 whole Bay leaves. Bring to a boil, reduce heat and simmer until soup cooks about 1/2 way down the pot and is thick. Take out the bay leaves and garlic (optional - I leave them in) before serving.
