a hearty lentil soup that is easily customizable. It's very low in calories and fat for a 1 cup serving.

Recipe Ingredients for Lentil Soup

1 serving Lentils
1 cup, chopped Carrots
1 cup, chopped or sliced Tomatoes, Red, Ripe
1 stalk, medium (7-1/2" - 8" long) Celery
2 clove Garlic
1/4 tsp Bay Leaf
2 cup Spinach
1 tbsp Vinegar Balsamic
0.5 tsp Pepper, Black
0.5 tsp Oregano, Ground
0.5 tsp, ground Basil, Dried
2.5 cup (8 fl oz) Water

Recipe Directions for Lentil Soup

  1. sautee carrot and celery (and onion if you prefer) without oil until tender (appx 5 min).

  2. add garlic, herbs and bay leaves and cook 2 min.

  3. add tomatoes, water (or broth) and lentils.

  4. simmer 30 min or until tender.

  5. puree with an immersion blender.

  6. stir in spinach, pepper and vinegar.
