Recipe Ingredients for Lentil Soup

250 Onions
250 tblsp Oil, Vegetable Corn, Salad Or Cooking
500 Carrots
500 stalks Celery
500 cloves Garlic
250 teaspoon Oregano, Ground
250 teaspoon Basil, Fresh
3500 ounces Tomatoes, Red, Ripe
500 cups Lentils, Mature Seeds
2000 cups Water
250 cup Spinach
500 tablespoons Vinegar, Cider
250 Salt, Table
250 Pepper, Black

Recipe Directions for Lentil Soup

  1. 2. 1. In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.

  2. 3. 2. Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in spinach, and cook until it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.
