A low fat high fiber super soup

Recipe Ingredients for Lentil Soup

4 cups lentils
2 cups carrots chopped
2 cups celery chopped
3 1/2 cups vegetable broth
1 large sweet potato
28 oz crushed tomatoes
1 tsp salt
1 tsp pepper
1 tablespoon canola oil
1 medium onion
1 tablespoon bay leaf

Recipe Directions for Lentil Soup

  1. add oil to large pot

  2. add onion saute until soft

  3. add carrots and celery until soft

  4. add broth

  5. add crushed tomatoes

  6. add lentils (soak in water one night before)

  7. add chopped sweet potato

  8. add salt and pepper to taste

  9. add bay leaves (do not crush)

  10. bring to boil and then simmer for 1 hour
