Yummy vegetarian soup. It's the best!

Recipe Ingredients for Lentil Soup

4 cups onions
4 cups leeks
1/4 cup olive oil
3 cups carrots
3 cups celery
1 pound lentils
1/4 cup tomato paste
3 garlic cloves
1 teaspoon cumin
1 teaspoon thyme
1 tablespoon salt
1 1/2 teaspoon pepper
2 quarts chicken stock
1 quart water

Recipe Directions for Lentil Soup

  1. Saute onions, leeks, and garlic in olive oil. Add all spices. Cook for 20 minutes.

  2. Add chopped celery and carrots and cook for 10 minutes.

  3. Add chicken stock, water, and tomato paste. Bring to a boil and then reduce to a simmer for 20 minutes.

  4. Add lentils and simmer for 25-30 more minutes.

  5. Finished. Can add some shredded chicken if you like.
