Lentil soup with potato and sweet potato

Recipe Ingredients for Lentil Soup

250 g lentils
400 g stock
150 g potato
120 g sweet potato
40 g onion
150 g carrot

Recipe Directions for Lentil Soup

Chop and lightly fry onion (no need for any oil), then add approx 1 litre of boiling water, add stock cubes (I prefer ham stock cubes), add lentils, chop potatoes into chunks (I personally leave the skins on the potatoes) and add to the broth, peel and chop sweet potatoes into chunks and add to the broth. Cover and simmer for approx 30 minutes.
